Today’s lunch is a double-entrée: On the bottom is dry kale slaw and edamame over cooked kasha; on the top is a vegan “chicken” patty and corn, plus sauces for both tiers. I guess the last few days of earning rollover points (in preparation for a Passover Seder) finally got to me!
