Lunch #100: Mason Jar Salad

It’s my 100th bento! I’m so happy you’ve joined me on this adventure, whether recently or from the very beginning.

For my 100th bento, I’ve decided to do something different: a mason jar salad! Like bento boxes, they’re very compact and easy to carry. The only downside is that you’ll need a bowl to dump the salad into at lunchtime. But if you carry a lunch bag, that shouldn’t be a big deal.

I’ve learned how to optimally pack my salads from this book—which started out as a blog! Maybe someday I’ll write a cookbook, too…

What’s Inside

  • Dressing: Rice vinegar, toasted sesame oil, agave, pepper
  • “Hill” beans
  • Carrots
  • Walnuts
  • Roasted beets
  • Cucumber
  • Cherry tomato
  • Baby spinach

  1. Yum! I’ve been wanting to get into the whole mason jar salad thing for a while… maybe this will be the catalyst that finally gets me to try it.
